Cookies!!!

I just made aaaaaaamazing cookies. They are my favorite.

So this week for my thesis I had an interview with a guy from Australia. I was talking to my mother about it, and we were reminiscing about an old middle school "around the world" project I did for social studies involving Australia, as well as a girl scout world day celebration thing where our troop presented on Australia. I remembered some cookies we made back in the day, called ANZAC biscuits, so I looked up a recipe online and it turned out I had all but one of the ingredients, so I went for it. I made some tonight in preparation for the competition tomorrow, and they rule. Make them.

And, I made them in British!!

Recipe I used:
Ingredients
85g porridge oats
85g dessicated coconut
100g flour
100g sugar
100g butter, plus extra for greasing the pan
1tbsp golden syrup
1tsp bicarbonate of soda

Preheat the oven to 180C. Combine the oats, coconut, flour, and sugar. Melt the butter on the stove and mix in the syrup. Boil 2tbsp water and mix in the bicarbonate of soda, then mix that into the butter mixture. Make a well in the dry ingredients and pour in the liquid ingredients, then stir. Use a spoon to form balls of the dough, place on the greased baking sheet, and bake 8-10 minutes.

So, I doubled the recipe for mine, it made about 45 cookies. I had read in another ANZAC biscuit recipe that you could also use brown sugar along with the white, so I used about 150g white sugar and like two spoonfulls of brown sugar. And the golden syrup I had was maple flavor, but that worked out fine too. I'm really learning that I can mess with recipes all I want and it will always work out-- not sure if that is a good lesson to learn or not, but I'll go with it for the moment. For the cookies I left them in balls for my first batch, but they don't spread much and I was afraid of them staying cold in the middle and browning too much on the outside, so I flattened them out a bit for the rest of the batches and they worked out really well.

Go try it. I'll let you know how the team reacts to them tomorrow.

I've had a very domestic day getting ready for the competition tomorrow, lots of making food and sewing and cleaning and nail painting... In the back of my mind I'm still paranoid about my thesis, but a weekend off, if I can relax long enough to enjoy it, will be awesome, and I can really hit it full force next week.
